New, elevated food truck option to complement Windridge Vineyards’ wines
A new pizza truck by Neil Dundee, Eternal Love & Pizza, opened at the Windridge Vineyards in Darnestown, Maryland. Dundee cut his teeth working for top chefs around the country. He is also the husband of Gina Chersevani, a cocktail wizardess who operates restaurant-bars in the DC area and rarely needs an introduction.
Dundee’s adventurous spirit took him on a path to this new opening. He will be slinging pies from Wednesday to Sunday from 11 a.m. to 6 p.m., using his social media savviness to post the specials on Instagram and Twitter. The goodness will emanate from a wood-fired brick oven that is attached to a restored 1973 Airstream.
As he will be surrounded by a farm and vineyard, Dundee will tap a certain farmer’s sensibilities. So, he’ll pick fresh produce daily, adjusting his order to eliminate waste. This will mean that when he has the ingredients, he will serve them; if not, they are out.
Adventure of experimentation
The crusts from Eternal Love & Pizza will have just the right amount of rye flour to make the most of the crust. Two years after he started working on an array of grains, multiple hydration levels, different shapes, and pan sizes, he found his groove. The crust imparts a robust and deeper flavor.
As for the ingredients, these simple yet progressive toppings let the crust be part of the final flavor profile. Eternal Love & Pizza truck will offer a variety of toppings, from classic pepperoni to truffle butter. Dundee will use menu names that are a nod to some of his favorite music artists and their popular song titles. The pizzas will be served in 16-inch pies, ranging from $16-$20.

- Fat Rabbit with Red Sauce, Beech, Button, Maitake, and Shiitake Mushrooms
- Lucifer with Red Sauce, Red Onion, Salami, Grated Pecorino Parmesan, Hot Honey, and Chili Flakes
- Little Red Corvette with Red Sauce, Red Pepper, Red Onion, and Shredded Mozz.

Dundee has held a job since a teenager; he got his first taste of kitchen life in high school at McDonalds and during college worked as a bartender at Holiday Inn in Frederick, MD. With a leap of faith and lucky break, he moved to New York City and worked for two famous chefs, Tony Fortuna and Charlie Palmer. Then, he joined Wolfgang Puck in Atlantic City as one of his sommeliers. Then the road led him back to Maryland and he opened VOLT for Bryan Voltaggio. Dundee opened a restaurant in Mumbai with Bryan and Michael Voltaggio, and assumed the role as General Manager for Ink restaurant in Los Angeles with Michael Voltaggio. Successful at operations, he was tapped by The LINE Hotel in Washington, DC with Todd Thrasher and MAKETTO with Erik Bruner Yang to open their establishments.
