The mobile ventures brings its BBQ to where customers are
Money Muscle BBQ food truck debuted in Silver Spring. The new venture, featuring American barbecue food, comes from married couple,Jennifer Meltzer and Chef Edward Reavis, who operate All Set Restaurant & Bar. During its initial phase, the food truck will serve Montgomery County and Prince Geoge’s County in Maryland, but will expand to Washington, DC and Virginia in its next phase.
One of soon-to-be standouts include Carolina Pulled Pork, a half-pound of pulled shoulder and butt meat slow-smoked for seven hours, plus Baby Back Ribs, served in one-third, two-third or whole rack sizes.
As a mobile venture, Money Muscle includes a menu of diverse barbecue styles and cuts of meat that also make their way to catered and private events. The food truck’s style reflects the background of Reavis, who hails from Emporia, a small town in Southern Virginia near the border with North Carolina.
The eclectic mix of barbecue favorites also hints at Reavis’ penchant for Texas-style barbecue. Expect to savor in Texas Style Brisket, simply slow-smoked with salt and pepper. There are poultry dishes, also: Applewood Smoked Turkey Leg that’s brined and smoked for seven hours, served with a BBQ demi-glace using turkey bones, in addition to the BBQ Rubbed Chicken, and Smoked Wings with a choice of Kansas City BBQ sauce, honey sriracha or dry rub.
There are plenty of handhelds at Money Muscle BBQ, too:
- Texas Brisket Sandwich with South Carolina Gold BBQ sauce, coleslaw and dill pickles served on brioche bun
- Carolina Pulled Pork Sandwich with zucchini pickles, coleslaw and N.C. BBQ sauce on a brioche bun
- A Black Bean Quinoa Burger features a housemade vegetarian burger, served with with chipotle coleslaw, fried shallots and Kansas BBQ sauce on a brioche bun
- Sides include BBQ Beans, Collard Greens, Cheddar Siracha Biscuits, and Skillet Cornbread
“Growing up in Virginia, BBQ is one of the things I enjoy cooking most,” said Ed Reavis. “And while BBQ purists can squabble over which style is better, Money Muscle will celebrate different cuts of meat and time-honored traditions, serving something that I know will make my grandmother proud.”
