One of the biggest names in Washington, D.C. will be opening a new restaurant in Capitol Hill. Kevin Tien, executive chef and co-owner of Himitsu, a James Beard finalist chef and Food & Wine’s Best New Chef in 2018, will open Emilie’s, a new restaurant with 3,313 square-feet of space at the Penn Eleven Condominiums spring 2019 at the historic Frager’s Hardware building. Co-owner and partner Sam Shoja and partner Arris Noble, will help spearhead the venture.
Tien’s role in bringing unique, Japanese-inspired cuisine to Himitsu in Petsworth earned him and the restaurant a well-respected standing in D.C.’s culinary scene.
Himitsu has earned many awards, including making Bon Appetit’s Best New Restaurants in 2017. “Taking my passion for Japanese cuisine, but pushing the envelope and getting our guests out of their comfort zones was exciting,” says Tien of his experience at Himitsu. “I’m looking forward to writing the next chapter and sharing my passion with the community on a larger scale and a different service style.”
Tien’s legendary repertoire includes work for celebrity chefs David Chang, while at Momofuku CCDC, and José Andrés at Oyamel.
Featuring large-plate focused dining, accompanied by Dim-Sum-style small plates carted around tableside to diners to enhance the Emilie’s experience for guests, the Tien plans to imprint his vision at this much-anticipated Capitol Hill restaurant. Tien will be supported by a cut-above kitchen team and the restaurant has indicated it will import the food local producers, farmers and ranchers to make the dining experience memorable for diners.
