Brazilian Amazon Culinary Week arrives at Siren by RW

Siren by Chef Robert Wiedmaier will be hosting an award-winning chef for 10 days starting August 31 during Brazilian Amazon Culinary Week. In partnership with the Brazilian Embassy, it will offer a five-course, prix-fixe menu with Chef Felipe Schaedler, of the Banzerio Restaurant, located in Mnaus, Brazil, and a “Chef of the Year’, by the magazine Veja Manaus Comer e Beber. He was also awarded the Order of Cultural Merit (Knight Class)—the highest recognition given by the Federal Government to personalities who assist in developing Brazil’s cultural identity. The $70 menu will feature dishes that will reflect a gastronomic journey into the basins of the Amazonian Region.

Amuse-Bouche

Saúva Ants with Espuma delicacy

First course

Dadinho de Tapioca [ Dadinho means little dice], Cupuaçu jelly, a delicacy from the fruit of a tropical rainforest tree

Second course

Crispy Tambuchi Ribs (a native fish of the Amazon River), topped with a succulent sweet and sour style sauce, and nutty sesame seeds

Third course

Pirarucu, paired with an acidic Tucupi sauce, hearts of palm, red quinoa, and perfumed with coriander

Final course

Spotlight on Puxuri seed (an herbal ingredient with regional hertiage): a delicate and creamy Chilled Tapioca Cake, made with luscious white chocolate ganache, and Puxuri seed syrup.

Experience Brazilian Amazon Culinary Week from August 31-September 9 at Siren. A portion of the proceeds will be donated to local D.C. Charity the American Experience Foundation and The VegaLume Foundation, a Brazil-based charity.
